Easy Tomato Soup Recipe for any kitchen!

RECIPE: TOMATO SOUP

Ingredients

  • 4-5 ripe tomatoes
  • 1 small onion, diced
  • 2 cloves garlic, minced or 1/2 tsp garlic powder
  • 2 cups water or broth
  • Salt and pepper to taste
  • Optional: 1 tbsp oil or butter, 1 tsp sugar (to balance acidity)

Instructions

Stovetop Option

  1. Cook the aromatics
    • Heat oil or butter in a pot over medium heat
    • Add diced onions and cook until soft for about 3 minutes
  2. Simmer the soup
    • Add chopped tomatoes and water/broth
    • Bring to a simmer and cook for 15-20 minutes, stirring occasionally
  3. Blend or mash
    • Use a blender or mash with a fork/potato masher until smooth or slightly chunky
  4. Season and serve
    • Add salt, pepper and sugar if needed

Microwave Option

  1. Cook the ingredients 
    • In a microwave-safe bowl, combine diced tomatoes, onions, garlic and water/broth
    • Cover and microwave on high for 5-7 minutes, until softened
  2. Mash and season
    • Mash with a fork or blend if available
    • Add salt and pepper to taste

Kettle or Thermos Option

  1. Soften the ingredients 
    • Boil water in a kettle
    • In a heat-safe container, add diced tomatoes, onion powder (if fresh onions aren’t available) and garlic powder
    • Pour hot water over the ingredients, cover and let sit for 10-15 minutes
  2. Mash and season
    • Mash as best possible and season before serving

Serving Suggestion: Enjoy on its own or with a piece of bread, top with croutons or shredded cheese
