RECIPE: TOMATO SOUP
Ingredients
- 4-5 ripe tomatoes
- 1 small onion, diced
- 2 cloves garlic, minced or 1/2 tsp garlic powder
- 2 cups water or broth
- Salt and pepper to taste
- Optional: 1 tbsp oil or butter, 1 tsp sugar (to balance acidity)
Instructions
Stovetop Option
- Cook the aromatics
- Heat oil or butter in a pot over medium heat
- Add diced onions and cook until soft for about 3 minutes
- Simmer the soup
- Add chopped tomatoes and water/broth
- Bring to a simmer and cook for 15-20 minutes, stirring occasionally
- Blend or mash
- Use a blender or mash with a fork/potato masher until smooth or slightly chunky
- Season and serve
- Add salt, pepper and sugar if needed
Microwave Option
- Cook the ingredients
- In a microwave-safe bowl, combine diced tomatoes, onions, garlic and water/broth
- Cover and microwave on high for 5-7 minutes, until softened
- Mash and season
- Mash with a fork or blend if available
- Add salt and pepper to taste
Kettle or Thermos Option
- Soften the ingredients
- Boil water in a kettle
- In a heat-safe container, add diced tomatoes, onion powder (if fresh onions aren’t available) and garlic powder
- Pour hot water over the ingredients, cover and let sit for 10-15 minutes
- Mash and season
- Mash as best possible and season before serving
Serving Suggestion: Enjoy on its own or with a piece of bread, top with croutons or shredded cheese
