RECIPE: LEMON GARLIC ROCKFISH FILLET
Ingredients
- 4 rockfish fillets (cut from a whole 2-3 lbs rockfish)
- 3 tbsp olive oil or butter
- 4 cloves garlic, minced
- 1 lemon (zest + juice)
- 1 1/2 tsp salt
- 1 tsp black pepper
- Fresh herbs (like parsley or cilantro) for garnish
- Optional: 1 tbsp paprika
Instructions
- Prepare the fish
- Pat fillets dry with a paper towel. Season with salt, pepper and paprika (if using).
- Heat it up
- In a pan over medium heat, add olive oil or butter. Once hot, add minced garlic and cook for 30 seconds.
- Cook the fillets
- Place rockfish fillets in the pan and cook for 3-4 minutes per side, until golden brown and flaky.
- Add flavor
- Squeeze fresh lemon juice over the fillets and sprinkle with zest.
- Serve and enjoy
- Garnish with fresh herbs and serve with rice, roasted veggies, or a fresh salad.
Serving Suggestions: For extra crispiness, lightly coat the fillets in flour before cooking!
